This difference in rice polish ratio brings a subtle but defining difference in taste from bottle to bottle: each one has its own special qualities and profile.

They are crafted using Yamada-Nishiki rice, polished down to - respectively - 23%, 39%, and 45% of the original grain size. This allows for a great premium sake experience!

  • Dassai 23 Junmai Daiginjo Sake 180ml: A velvet-textured and ethereal sake that’s delicately floral with notes reminiscent of honey, melon, peach, pear sorbet, dried pineapple and candied chestnut.  Alcohol 16.00% RPR 23% SMV 4

 

  • Dassai 39 Junmai Daiginjo Sake 180ml: A more luscious sake displaying lots of tropical fruit, mellow acidity and a finish of crystal clarity.  Alcohol 16.00% RPR 39% SMV 3

 

  • Dassai 45 Junmai Daiginjo Sake 180ml: Expect honeydew melon, mango sorbet, pear, green apple, pineapple, gooseberry and lime, plus a filigree texture, a dry finish and a delicious umami depth. Alcohol 16.00% RPR 45% SMV 3

For those new to sake, and particularly for those who are already fans of crisp white wine, there’s no better place to start your journey than with Dassai. Best served slightly chilled, we recommend tasting these three expressions as a flight or pairing them with sashimi, sushi, tempura, ceviche, aguachile, fruit sorbet, tropical macarons or a light cheesecake.
