A fridge-friendly plastic tub of miso paste. ‘Shinshuu Miso’ is one of the most popular miso in Japan, made from soy beans (Gluten free), rice, salt and alcohol. This is a white type shinshuu miso paste. Miso can be used as an alternative to soy sauce and in all sorts of Japanese cooking, from the famous miso soup, to marinades, dressings and toppings. It is also used increasingly in health-food cooking as it is low in fat and cholesterol.
How to cook Miso Soup with tofu and wakame:
Bring water to a boil in a small saucepan. Add bonito flakes, turn off the heat and allow the broth to stand for 3 to 4 minutes. (Strain if the flakes are coarse). Return the broth to a boil, then add diced tofu, wakame and miso creamed in a little fo the hot broth. Bring the broth to the boil and remove it from the heat. Top with a sprinkling of the leeks and serve hot or cold.
