Red miso is made from soybeans fermented with barley or other grains, with a higher percentage of soybeans and a longer fermentation period. It can range in colour from red to dark brown. The deep umami flavour of red miso can overwhelm mild dishes, but is perfect for hearty soups, braises, and glazes.
The Hayashi family didn’t realise in 1936 what they had created. Their small family business would become Japan’s number one natural and organic miso, with loyalists around the world, from chefs to home cooks.
